1 kilo(2 pounds) fresh peas in the pod (or 1 pound frozen peas)
150 ml olive oil
600 grams potatoes cut into 3cm x 3cm cubes
8-10 green onions, thinly sliced (I use the entire onion)
300 ml water
1 cup fresh dill, divided into stems and leaves, finely chopped
salt and pepper
Shell the peas if using fresh. (There's no need to rinse them.)
Heat olive oil in a large, heavy-bottomed pan over medium heat. Add the green onions and saute them lightly for a minute or so.
Add the chopped dill stems and saute them for 30 seconds.
Add the potatoes and saute for 2-3 minutes, stirring often.
Add the peas and stir until they're well coated with the oil.
Add the salt, pepper, and water.
Let it come to a boil and then turn the heat to low and cover the pan. Simmer for 20-45 minutes (depends on the peas) until the peas are tender.
About five minutes before the peas are ready stir in the rest of the dill(the chopped leaves).
Note: You don't want the majority of the fresh dill to cook. That's why it's added at the end.
