FRIED RICE

This is the best fried rice recipe I've ever found. It's a Spam fried rice recipe that I have adapted for chicken. (Sorry, Spam fans. I just can't handle the stuff.)

I sometimes add cooked, finely chopped carrots as well.

Here's the original recipe

ingredients

2 tablespoons soy sauce

2 tablespoons vinegar

0.5 teaspoon sesame oil

0.5 teaspoon sugar

1 boneless, skinless chicken breast, thinly sliced

2 eggs

Vegetable oil

1 cup uncooked rice

0.5 red onion, minced

2 cloves garlic, minced

1 green pepper, finely chopped

0.25 cup frozen peas

0.25 cup frozen corn

instructions

Cook the rice and set aside to cool.

Mix the soy sauce, vinegar, sesame oil, and sugar in a bowl and set aside.

Beat the two eggs, cook them, and set aside.

Heat the oil in a large, non-stick skillet or wok and saute the chicken until done. Remove from pan and set aside.

Heat a bit more oil and add the cooked rice, onion, garlic, peppers, peas, and corn. Break up any large lumps of rice.

Mix well, spread out in the pan and let it fry for a minute or two. Don't stir it! Now stir it again and do the same thing. Let it sit there undisturbed and frying away for a minute or two. Now add the cooked chicken and give it a good mix. Now add the marinade and mix again. (The original recipe cautions against adding all of the marinade at once. However, I just dump it all in.)
